All American Grilled Cheeseburger

Ingredients

Instructions

  1. Set up a charcoal kettle grill for two-zone cooking, with hot coals on one side and a cool area on the other.
  2. Divide the 1 lb ground chuck into four portions and form patties. Season the meat with 1 teaspoon AP seasoning before shaping, then season both sides with 1 tablespoon steak rub.
  3. Press a thumbprint into the center of each patty and place a pat of butter in each dent.
  4. Start the burgers on the cool side. After 3 minutes, move them a little closer to the coals, but not directly over them.
  5. After 6 minutes, flip the burgers. Repeat the process, cooking about 12 minutes total for medium.
  6. Right before removing the burgers, place a slice of American cheese on each and let it melt for about 30 seconds.
  7. Build each burger on a toasted sesame seed bun: mayo and a little mustard on the bottom bun, then lettuce, tomato and dill pickle slices, the burger, two strips of crispy bacon, and the top bun spread with mayo.
