Aloo methi recipe
Ingredients
- Potato250 g
- Fenugreek1 ½ cups
- Garlic2 cloves
- Cumin¾ tsp
- Oil2 tbsp
- Salt½ tsp
- Chili pepper2
- Turmeric¼ tsp
- Asafoetida1 pinch
- Garam masala½–¾ tsp
Instructions
- Pluck the methi leaves, discarding the stalks. Put the leaves in a large bowl, sprinkle with 1 teaspoon salt and vinegar, and set aside for 10 minutes.
- Rinse the leaves well in several changes of water, then drain them in a colander.
- Peel the potatoes and cut them into 1-inch cubes. Keep them submerged in water until needed.
- Heat the oil in a pan. Add the cumin seeds and, when they crackle, add the garlic and green chilies. Fry until the garlic smells good. Sprinkle in the hing.
- Drain the potatoes and add them to the pan. Sprinkle with turmeric and fry for 1 to 2 minutes.
- Cover and cook on low heat until the potatoes are soft, stirring occasionally. If the pan dries out, sprinkle a little water and keep cooking.
- Meanwhile, roughly chop the methi leaves.
- When the potatoes are fork-tender, add the garam masala and salt and fry for a minute.
- Add the chopped methi leaves and fry until they wilt completely and smell fragrant. Adjust the salt if needed.
