Ingredients

Instructions

  1. Preheat the oven to 170°C/325°F (fan). Line two baking trays with a silicone mat or baking parchment.
  2. Whisk the egg whites to stiff peaks.
  3. Fold in the ground almonds, caster sugar and vanilla extract.
  4. Slowly stir in the amaretto, adding just enough to make a thick, very sticky paste that holds together in your hand.
  5. Put the caster sugar and icing sugar for rolling on two separate plates.
  6. Scoop out a teaspoon of mixture and roll it into a walnut-sized ball. Roll it in caster sugar, then in icing sugar, and place on the tray.
  7. Repeat with the rest of the dough, leaving space between the balls as they will spread slightly.
  8. Flatten each ball slightly with a finger; the edges may crack, which is fine.
  9. Bake for 15 minutes.
  10. Leave to cool for 5 minutes, then move to a rack. Serve warm or let cool completely.
