- Ground turkey1 ½ lb
- Salt2 tsp
- Black pepper · ground1 tsp
- Butter2 tbsp
- Onion1
- Sweet corn1 ½ cups
- Garlic6
- Bell pepper · canned roasted2
- Coriander seed · ground smoked dried1 ½ tsp
- Canned tomato28 oz
- Canned beans28 oz
- Chicken broth3 cups
- Maple syrup¼–½ cups + 3 tbsp
- Cilantro · chopped¼ cups
- Scallion2
- Lemon1–2
Instructions
- Preheat a large soup pot over medium heat. Fry half of the diced bacon (about 1/2 lb) until golden and crispy, then remove the bacon bits and leave the fat in the pot.
- Fry half of the ground turkey in batches so the pot is not overcrowded. Season lightly with salt and pepper and fry until well browned, breaking it into small bits with a spatula. Set aside.
- In the same pot over medium heat, add a few tablespoons of butter, the diced onion and the corn. Sauté about 7 to 9 minutes, until the onion is translucent.
- Add the minced garlic, diced peppers, and all the seasonings (salt, pepper, coriander, cumin, chipotle chili, paprika, oregano and basil). Stir and cook for 1 minute.
- Add the crushed tomatoes, drained beans and chicken broth. Return the browned turkey and bacon bits to the pot. Add 1/2 cup pure maple syrup and stir well.
- Cover and bring to a simmer over medium-high heat. Then reduce to low and cook for 1 to 1 1/2 hours, stirring every 20 minutes.
- Slow cooker option: put all the ingredients in a slow cooker and cook on high for 6 hours.
- Meanwhile, preheat a medium frying pan over medium heat. Add the remaining diced bacon (about 1/2 lb) and fry until golden and almost crispy.
- Pour in a few tablespoons of pure maple syrup and cook the bacon 1 to 2 minutes, until the syrup coats the bits.
- Tilt the pan so the grease collects on one side, then spoon the maple bacon bits into a separate bowl.
- Once the chili is cooked, stir in a few tablespoons of chopped cilantro and the green onions. To adjust sweetness, squeeze in the juice of 1 to 2 lemons (or 4 limes).
- Serve each bowl topped with the maple bacon bits.
