Amazing Black Forest Cake Recipe
Ingredients
- Flour2 ¼ cups
- Sugar2 ¾ cups
- Baking powder1 ½ tsp
- Baking soda1 tsp
- Salt½ tsp
- Dutch process cocoa · powder½ cups
- Coffee · powder2 tsp
- Milk½ cups
- Sour cream½ cups
- Vegetable oil½ cups
- Egg2
- Vanilla1 tbsp
- Cherry1 ½ lb + ⅓ cups
- Cream4 cups
- Kirsch2 tbsp
- Chocolate½ cups
Instructions
- Preheat the oven to 350°F. Grease two 8-inch round pans, line the bases with parchment.
- In a large bowl, whisk together the flour, sugar, baking soda, baking powder and salt.
- In a medium bowl, whisk the cocoa and espresso powder with the boiling water until smooth. Whisk in the milk, sour cream and oil, then the eggs and vanilla.
- Pour the cocoa mixture into the dry ingredients and whisk until smooth; the batter will be runny. Divide between the pans.
- Bake for 30–35 minutes, until the cake springs back when pressed and the sides pull away from the pan.
- Cool in the pans on a wire rack for 20 minutes, then invert onto the rack, parchment side down, and cool completely.
- Put the cherries, sugar and kirsch in a bowl, stir, cover and macerate for 30–60 minutes, stirring occasionally. Drain the syrup, adding cold water or kirsch to make 160 ml if needed.
- Beat the cold cream and powdered sugar on medium speed until it starts to thicken (about 1 minute), then on medium-high until soft peaks form (about 2 minutes).
- Drizzle in the kirsch and beat for 30 seconds to 1 minute until stiff peaks form. Reserve 1 cup of cream in a piping bag with a closed star tip and refrigerate.
- Remove the parchment and cut each layer in half horizontally to make four thin layers. Set aside one bottom half as the top layer.
- Place a bottom half cut-side up on a plate, brush with 3–4 tablespoons of syrup, spread about ¾ cup of cream and arrange a third of the cherries on top. Repeat with the next two layers.
- Place the reserved layer cut-side down, pressing gently until level.
- Spread the remaining cream over the top and sides in an even layer. Decorate with chocolate curls or sprinkles if desired; for a drip, chill 30 minutes, then pipe ganache around the top edge.
- Pipe the reserved cream on top, garnish with fresh cherries and keep refrigerated until serving.
