Instructions
- In a medium bowl, whisk together the soy sauce, apple juice, sesame seed oil, rice vinegar, brown sugar, ginger, garlic and sesame seeds to make the Korean barbecue sauce. Set aside.
- Trim excess fat from the beef tri-tip and slice the meat against the grain into thin pieces about 1 ½ inches long.
- Preheat a large frying pan over high heat and add the grapeseed oil. When the oil is hot, add the beef, season with salt and fry until well browned on all sides, about 5 to 7 minutes. If needed, cook the beef in two batches so the pan isn't crowded.
- Pour the barbecue sauce over the beef and bring to a simmer. Simmer for a few minutes, then stir in the cornstarch mixed with the water. Simmer until the sauce thickens and coats the beef. Take off the heat and keep warm.
- For the creamy sauce, mix the mayonnaise, Greek yogurt, gochujang and lime juice in a bowl. Transfer to a squeeze bottle if you like.
- For the kimchi slaw, put the cabbage, carrots, cilantro, sliced green onion and the dressing sauce in a medium bowl. Finely chop the kimchi, add it to the bowl and toss everything together.
- To assemble, toast the tortillas if you like. On each tortilla, layer a slice of avocado, 4 to 6 pieces of beef, a few tablespoons of slaw, a sprinkle of cilantro and green onion, and a drizzle of creamy sauce. Finish with a squeeze of fresh lime juice. Keep the components separate and assemble just before eating.
