Amazing Maple Pecan Pie Cheesecake
Ingredients
- Graham cracker9–10
- Pecan · diced2 ½ cups
- Butter0.58 cups
- Cream cheese32 oz
- Sour cream1 cup
- Maple syrup0.83 cups
- Vanilla3 tsp
- Brown sugar½ cups
- Flour2 tbsp
- Egg4
- Sugar1 cup
- Heavy cream2 cups
- Salt¼–½ tsp
Instructions
- Preheat the oven to 300°F (149°C). Wrap the outside of a 9-inch (23 cm) springform pan with 2 to 3 layers of wide foil for a water bath.
- Pulse the graham crackers and 1/2 cup pecans in a food processor to fine crumbs. Add the melted butter and pulse until evenly coated. Press into the base of the pan, using a potato masher to make it firm and level.
- Beat the softened cream cheese for 8 to 9 minutes until very smooth, scraping the bowl often.
- Add the sour cream, vanilla and maple syrup and beat for a few minutes, scraping the bowl halfway through.
- Add the brown sugar, flour and eggs and mix until smooth. Fold in the diced pecans, then pour the batter over the crust.
- Set the springform pan on a large baking sheet and pour about 1 inch of warm water onto the sheet around it.
- Bake at 300°F for 2 hours, until set. Turn off the oven, prop the door open with a wooden spoon, and let the cheesecake cool slowly for a few hours. Then refrigerate overnight.
- Make the caramel: in a medium saucepan, cook the sugar and water without stirring over medium heat for 10 to 12 minutes, until it turns a rich amber colour.
- Whisk in the butter until melted, then add the heavy cream; the mixture will foam up. Off the heat, stir in the salt and vanilla, let it cool in the pan for 5 minutes, then pour into a measuring cup to cool and thicken.
- The next day, remove the cheesecake from the pan and move it to a cake stand. Stir 1 cup of the caramel with 1 cup pecan halves until coated, then spread over the top of the cheesecake.
- Whip the chilled heavy cream and maple syrup on medium to high speed for 4 to 5 minutes, until stiff peaks form. Transfer to a piping bag.
- Pipe the whipped cream as dollops on the side of the cheesecake just before serving and keep it chilled.
