Amazing Strawberry Cheesecake Recipe
Ingredients
- Graham cracker2 ¼ cups
- Sugar3 tbsp + 1 ¼ cups + ½ cups
- Butter5 tbsp
- Cream cheese3
- Salt¼ tsp
- Sour cream½ cups
- Lemon5 tsp
- Vanilla4 tsp
- Egg3
- Strawberry2 lb
- Cornstarch2 tsp
Instructions
- Preheat the oven to 350°F. Lightly grease a 9-inch springform pan with baking spray.
- Mix the graham cracker crumbs and 3 tablespoons sugar, then stir in the melted butter until it holds together when squeezed. Press into the bottom and 1 inch up the sides of the pan, and place the pan on a rimmed baking sheet.
- Bake the crust for 10 to 15 minutes, until fragrant and the edges are starting to turn golden brown. Let it cool completely.
- Beat the cream cheese on medium-low speed for about 2 minutes until very smooth. Add 1 1/4 cups sugar and the salt and beat for about 2 more minutes, scraping the bowl a few times.
- Add the sour cream, lemon zest and vanilla and beat on medium for about 1 minute. Scrape the bowl. Add the eggs and beat just until combined, about 1 minute, scraping the bowl once. Pour the filling into the cooled crust; it will be very full.
- Bake for 15 minutes. Reduce the oven to 300°F and bake until the cheesecake is lightly puffed, the edges are set and the centre has a slight jiggle, about 1 hour.
- Turn off the oven, leave the door shut and let the cheesecake cool in the oven for 1 hour. Then cool it to room temperature, cover loosely and refrigerate overnight or for at least 6 hours.
- For the topping, put 1 pound of strawberries, 1/4 cup (60 ml) water, the sugar and lemon juice if using in a medium saucepan. Sprinkle with cornstarch and stir.
- Bring to a boil over medium heat, stirring often, and boil for 5 minutes. Mash the strawberries until very broken down, then cook about 10 minutes until thickened. Add more water if you want a thinner sauce.
- Remove from the heat and stir in the remaining 1 pound of strawberries and the vanilla. Transfer to a bowl and let cool until lukewarm.
- Run a knife around the edge of the cheesecake, release the spring and remove the sides. Move the cheesecake to a serving plate, top with the cooled strawberry sauce, and keep covered in the fridge for up to 4 days.
