An-Doughnut Recipe - Japanese Cooking 101
Ingredients
- Flour7 oz
- Baking powder2 tsp
- Butter2 tbsp
- Sugar1 ¾ oz + ½ cups
- Egg1
- Milk2 tbsp
- Vanilla½ tsp
- Red bean · paste10 tbsp
- Frying oil
Instructions
- Sift the cake flour and baking powder together a couple of times.
- Shape the anko into 10 tablespoon-sized balls. Spread 1/2 cup sugar thinly on a plate or baking sheet.
- In a large bowl, whisk the softened butter and sugar well.
- Add the lightly beaten egg to the butter mixture in 3 parts, then add the milk and vanilla and whisk.
- Add the flour mixture and mix with a wooden spatula or spoon until uniform. If too sticky, rest in the fridge for 30 minutes.
- Divide the dough into 10 pieces and form balls. Flatten each into a 3-inch (7.5 cm) round, thicker in the center and thinner at the edges.
- Place an anko ball in the center of each dough round and wrap the dough completely around it.
- Heat the oil to medium-low. Fry the doughnut balls, turning often, until golden brown, taking care not to burn the surface.
- While still hot, coat the doughnuts in sugar.
