An Irresistible Cookie Combination: Peanut Butter Oatmeal Cookies
Ingredients
- Butter10 tbsp
- Brown sugar⅔ cups
- Sugar¼ cups
- Peanut butter½ cups
- Egg1
- Vanilla1 tsp
- Flour1 cup
- Cornstarch1 tsp
- Baking soda¾ tsp
- Salt¾ tsp
- Oats1 cup
Instructions
- Beat the butter with both sugars in a large bowl until creamy and well combined.
- Mix in the peanut butter until smooth, then add the egg and vanilla and stir until combined.
- In a separate bowl, whisk the flour, cornstarch, baking soda and salt together.
- On low speed, mix the dry ingredients into the wet until fully incorporated, scraping the sides and bottom of the bowl.
- Stir in the quick oats.
- Cover the dough and chill for at least 30 minutes (or overnight).
- Meanwhile, preheat the oven to 375°F (190°C) and line cookie sheets with parchment paper.
- Roll the chilled dough into 2-tablespoon balls (38 g) and place them at least 2 inches (5 cm) apart on the sheets.
- Bake for 8–10 minutes, until the edges are just turning light golden; the centers may look slightly underdone.
- Cool completely on the sheet before eating, as the centers keep baking while they cool.
