Anyone can make pasta
Ingredients
- Semolina flour250 g
- Mls room temperature water125
- Salt
- Tomato sauce
Instructions
- In a large bowl, add the semolina flour and slowly pour in the water while mixing with a spoon or your hand until it forms a ball of dough.
- Knead the dough on a clean surface for 10 minutes. If it is too dry or crumbly, add a little more water; if it is too wet, sprinkle in more flour. It should end as a smooth, elastic ball.
- Wrap the dough in plastic wrap and let it rest for 30 minutes.
- Cut off about one-sixth of the dough and wrap the rest again.
- Roll the piece with the heels of your hands into a rope about 1.5 cm (½ inch) thick.
- Cut the rope into pieces about 1.5 cm (½ inch) wide.
- Roll each piece with your thumb over a gnocchi board, fork or grater, pressing away from you and flicking at the end, so it curls into a shell shape.
- Sprinkle the finished pasta with semolina so it does not stick.
- Boil a large pot of heavily salted water. Add the pasta and cook until al dente, about 5-7 minutes depending on size. The pasta should float, but taste a piece to check it is cooked.
- Spoon the pasta into the pan with the tomato sauce and a good splash of pasta water. Cook 1-2 minutes in the sauce, then serve.
