Ingredients
- Oats2 cups
- Cinnamon1 tsp
- Baking powder1 tsp
- Salt¼ tsp
- Applesauce¾ cups
- Greek yoghurt½ cups
- Milk¾ cups
- Egg2
- Maple syrup⅓ cups
- Butter · melted2 tbsp
- Vanilla1 tsp
- Apple2
- Walnut½ cups
Instructions
- Preheat the oven to 190°C (375°F). Lightly grease a 20 x 20 cm (8 x 8 inch) baking dish.
- In a large bowl, mix the oats, cinnamon, baking powder and salt.
- In another bowl, whisk together the applesauce, Greek yogurt, milk, eggs, maple syrup, melted butter and vanilla until smooth.
- Pour the wet mixture over the dry ingredients and stir until combined. Fold in the diced apples and the nuts, if using. Leave for 5 minutes so the oats start to absorb the liquid.
- Spread the mixture evenly in the prepared dish and add a few extra apple pieces on top if you like.
- Bake for 35-40 minutes, until the centre is set and the edges are lightly golden.
- Let cool for 10-15 minutes before slicing.
