- Cream300 ml
- Cinnamon · ground1 ¾ tsp
- Brown sugar145 g

Instructions
- Preheat the oven to 180°C fan (355°F). Grease and line the base and sides of a 22 cm (9 in) springform pan.
- Cream the butter and sugar in a food processor until light and fluffy. Add the egg, vanilla and ginger and process until well combined.
- Sift in both flours and pulse until the mixture just comes together. Spread it evenly in the tin and smooth the top with a palette knife.
- Bake the base for 15–18 minutes, until the top is slightly golden.
- Slice the apples thinly into rounds, toss them in the lemon juice and arrange them in concentric circles from the outside in, covering the base completely.
- Return to the oven and bake for a further 25–28 minutes, until the internal temperature reaches 90°C (194°F) when probed.
- Make the crumble: process the brown sugar, flour, oats, cinnamon and nutmeg until well combined. Add the cold diced butter and pulse until it resembles coarse breadcrumbs. Scatter evenly over the apples.
- Bake for a further 25 minutes, until the crumble is golden brown. Leave to cool completely in the tin.
- Whip the cream, icing sugar and cinnamon to firm peaks and serve with the sliced cake.
