Ingredients

Instructions

  1. Set the pellet smoker to 250°F for indirect cooking with apple pellets; any smoker works if it holds 250°F throughout, with apple wood added for smoke.
  2. Trim the membrane from the ribs, spritz with apple cider vinegar, and season lightly with kosher salt. Rest 15 minutes.
  3. Coat all sides of the ribs with a medium layer of Heath Riles Apple Rub and rest 15 minutes before smoking.
  4. Place the racks on the smoker and smoke for 2 hours, spritzing every 45 minutes with equal parts apple cider vinegar and apple juice.
  5. Wrap each rack in foil. Put half the butter pats on the foil, brush the meat side with half the apple butter, lay the ribs meat side down on the butter, spritz the bone side with the vinegar-juice mix, and wrap tightly.
  6. Return the wrapped ribs to the smoker and cook 1½ hours, or until tender.
  7. Put the apple jelly in a microwave-safe bowl with a splash of apple juice. Heat for 5 minutes or until melted, stirring halfway. Stir in the BBQ Sauce and Vinegar Sauce until combined.
  8. Unwrap the ribs and set them meat side down on a foil-lined sheet pan. Season the bone side lightly with apple rub, brush with glaze, then flip meat side up and lightly add more rub.
  9. Return the ribs to the smoker for 5-10 minutes, then glaze the meat side and cook 10-15 minutes more, until the sauce sets and starts to caramelize. Watch closely so it does not burn.
  10. Remove the ribs from the smoker and cut into portions.
