Ingredients

Instructions

  1. Wash the apples, quarter them, and remove the cores and stems; slice each quarter in half lengthwise.
  2. Put the apple pieces in a large, shallow baking dish with the water and sugar. Cover tightly with foil or a baking tray and bake at 160°C (330°F) for 1 hour, or until very soft.
  3. While still hot, pass the cooked apples through a food mill or ricer into a clean bowl to make a smooth puree, discarding the skins.
  4. Return the puree to the shallow dish, stir in the vanilla, and bake uncovered for 25 minutes, stirring halfway through.
  5. Turn off the oven and leave the dish inside with the door closed for a few hours, or preferably overnight, so the sauce firms up.
  6. Once cooled, taste and add more sugar if you like.
