Apple Turnovers
Ingredients
- Apple4
- Cornstarch2 tsp
- Cinnamon1 tsp
- Sugar½ cups
- Vanilla½ tsp
- Salt
- Puff pastry2
- Egg1
- Whipped cream3
Instructions
- Put the diced apples in a large saucepan and toss with the cornflour. Add the cinnamon, sugar, vanilla and a pinch of salt. Cook on medium to medium-high heat, stirring regularly, for 5 minutes, until the apple is softened but still holds its shape, with some caramel but not too much.
- Spread the filling on a large plate and let it cool completely.
- Line a large cutting board or upside-down tray with baking paper.
- Working with one puff pastry sheet at a time while it is barely thawed, cut it into 4 squares of 12.5 cm (5 in). Brush two sides with egg, then pile filling onto the egg-brushed side, keeping sauce off the pastry. Fold over and seal the edges with a fork dipped in flour. Move to the lined board.
- Refrigerate the turnovers for 20 minutes.
- Preheat the oven to 200°C/400°F (180°C fan).
- Slide the paper with the turnovers onto a large baking tray. Brush with egg, prick 3 times, and bake 25 minutes or until golden.
- Serve warm, dusted with icing sugar, with whipped cream for dunking.
