Arayes - Lebanese Meat Stuffed Pitas!
Ingredients
- Bread5
- Olive oil
- Onion½
- Ground beef500 g
- Garlic3
- Parsley · finely chopped1 tbsp
- Coriander seed · ground3 tsp
- Cumin · ground3 tsp
- Smoked paprika1 ½ tsp
- Allspice · ground¾ tsp
- Cayenne pepper½ tsp
- Salt1 ¾ tsp
- Yoghurt1 cup
- Tahini2 tbsp
- Lemon1 tbsp
Instructions
- Grate the onion on a box grater into a bowl, keeping all its juices. Add the remaining meat filling ingredients and mix well with your hands.
- Divide the filling into 10 portions (about 55 to 60 g, 1/4 cup each) and flatten each into a semicircle slightly smaller than a pita half.
- Gently open a pita half, place a portion of meat inside, close it and press the meat evenly to the edges.
- Preheat the oven to 120°F (50°C) and place a rack on a tray to keep the cooked arayes warm.
- Heat a large frying pan over medium-high heat. Spray both sides of the pita with olive oil and cook 2 or 3 pieces at a time for about 2 minutes per side, pressing lightly with a spatula, until golden and crisp.
- Move the cooked arayes to the rack in the oven to keep warm, then cook the rest.
- Cut in half if you like, pile on a platter and serve with the whipped tahini sauce.
- For the whipped tahini sauce: put the ingredients in a heatproof bowl and whisk to combine. Microwave on high for 15 seconds, then whisk again until it resembles soft whipped cream. Use slightly warm or at room temperature.
