Arugula Steak Salad Recipe | Restaurant-Style Steak Salad at Home
Ingredients
- Beef1
- Saltto taste
- Black pepper
- Butter1–2 tbsp
- Arugula5 oz
- Red onion¼
- Parmesan cheese¼ cups
- Olive oil3 tbsp
- Lemon1 tbsp
- Balsamic vinegar1 tbsp
- Dijon mustard1 tsp
- Honey1 tsp
- Pepperto taste
Instructions
- Pat the steak dry with paper towels, then let it sit at room temperature for 15–20 minutes.
- Season the steak generously on both sides with salt and freshly ground black pepper.
- Whisk the olive oil, lemon juice, balsamic vinegar, Dijon mustard, honey, salt and pepper in a small bowl until smooth. Taste and adjust the seasoning.
- Heat a cast iron skillet or heavy pan over high heat until very hot. Add the steak and leave it untouched for 2–3 minutes, until a deep golden crust forms.
- Flip the steak, add the butter, and as it melts and foams, spoon the butter over the steak for 1–2 minutes.
- Keep cooking to your preferred doneness: rare 2–3 minutes per side, medium-rare 3–4 minutes per side, medium 4–5 minutes per side. Thicker steaks need more time.
- Rest the steak on a cutting board or plate for 5–10 minutes before slicing.
- In a large bowl, combine the arugula, red onion and parmesan. Drizzle over the dressing and toss gently until lightly coated.
- Slice the steak against the grain and place it on top of the salad. Serve immediately.
