Asiago Cheese & Sun-Dried Tomato Quick Bread
Ingredients
- Buttermilk1 cup
- Egg2
- Flour2 cups
- Baking powder1 tsp
- Baking soda1 tsp
- Garlic powder1 tsp
- Sugar1 tbsp
- Salt1 tsp
- Black pepper · ground¼ tsp
- Basil · chopped¼ cups
- Butter · cubed, melted7 tbsp
- Parmesan cheese · shredded1
- Sun dried tomato · chopped⅓ cups
Instructions
- Preheat the oven to 350°F (177°C). Grease a 9×5-inch or 8.5×4.5-inch loaf pan with butter or nonstick spray.
- Whisk the cold buttermilk and eggs together until combined.
- In a large bowl, or a food processor, combine the flour, baking powder, baking soda, garlic powder, sugar, salt, pepper and chopped basil or parsley. Add the cold cubed butter and cut it in until coarse crumbs form, then transfer to a large bowl if using a processor.
- Stir in the asiago or parmesan and sun-dried tomatoes, then pour in the buttermilk mixture and stir until combined. The batter will be thick, chunky and sticky.
- Spread the batter in the prepared pan and pour the melted butter evenly over the top, if using.
- Bake for about 50 to 60 minutes, starting to check at 45 minutes, until a toothpick inserted in the centre comes out clean. In an 8.5×4.5-inch pan, expect closer to 60 minutes. If the top browns too quickly halfway through, cover loosely with foil.
- Cool the bread in the pan on a rack for at least 10 minutes before slicing, or let it cool completely in the pan.
