Asian Glazed Salmon
Ingredients
- Salmon2 x 180 g
- Oil
- Ginger1 tsp
- Garlic1
- Soy sauce1 tbsp
- Oyster sauce2 tbsp
- Hot sauce2 tbsp
- Sesame seed
- Scallion
- Steamed Asian Greens
- Rice
Instructions
- Combine the marinade ingredients in a shallow bowl, add the salmon and turn to coat. Cover and marinate for 30 minutes or up to overnight.
- Preheat the grill or broiler to high and set the rack 25 cm / 10 in from the heat source.
- Place the salmon on a baking tray with no oil and no paper. Dab on the glaze where it will stick; don't pour excess, as it will pool and burn.
- Grill or broil for 7 minutes. Remove, then spray the surface generously with oil.
- Grill or broil another 1 to 3 minutes until the surface is caramelised and the salmon is cooked: the flesh should flake and reach 50°C / 122°F internally for medium rare. Watch closely to avoid overcooking.
- Sprinkle with sesame seeds and sliced scallions or shallots, and serve.
