Ingredients
- Butter · chopped4 tbsp
- Marshmallow1 bag
- Ube extract1 tsp
- Chocolate2
- Graham cracker20
- Edible gold dust or foil · for garnish
Instructions
- Preheat the oven to 325°F with the rack in the centre.
- Line a 9x13-inch baking dish with crinkled, then unfurled, parchment paper, and lightly grease it.
- Spread the chopped butter evenly over the bottom of the lined dish, then top with an even layer of marshmallows.
- Bake for 10 minutes, until the marshmallows are puffed and softened.
- Remove from the oven and stir in the ube extract until the marshmallows are an even purple.
- Let it set and cool: about 2 hours at room temperature on a wire rack, or 1 hour in the fridge.
- Remove the marshmallow slab from the dish. Lay 10 graham crackers over the top in two rows of five, then use them as a guide to cut the slab into 10 bars with a lightly greased knife.
- Flip each bar so the marshmallow faces up and the graham cracker is underneath. Toast the marshmallow with a kitchen torch until golden brown.
- Top each bar with a piece of chocolate, then cover with another graham cracker to sandwich.
- Decorate with edible gold dust or gold foil if you like.
