Australian Pikelets!

Ingredients

Instructions

  1. Whisk the flour, baking powder, salt and sugar together in a bowl.
  2. Make a well in the centre, add the egg, milk and vanilla, and whisk until nearly lump-free. The batter should be about the thickness of thick honey: thinner than tomato sauce, thicker than maple syrup.
  3. Melt 1 teaspoon of butter in a non-stick pan over medium-high heat (medium if your stove runs hot). Wipe most of it away with a paper towel so no visible butter bubbles remain.
  4. Drop about 2 tablespoons of batter into the pan and shape into 7.5 cm (3 inch) rounds. Cook 4 at a time.
  5. Cook until bubbles form on the surface and at least 4 of them have popped, about 1 1/2 minutes. Flip, then cook the other side for 1 minute or until golden.
  6. Move the pikelets to a plate and cook the next batch. Add no extra butter until the third batch.
  7. Serve warm with jam and whipped cream, or with butter.
