Authentic Greek Tzatziki (Thick & Creamy) | David Cooks the World | EP.2
Ingredients
- Cucumber1
- Salt
- Greek yoghurt1 cup
- Garlic1 clove
- Olive oil3 tbsp
- Dill1 tbsp
- Black pepper
Instructions
- Peel the cucumber and grate it on the small holes of a box grater. Put it in a clean towel or cheesecloth and squeeze out as much liquid as you can.
- Put the grated cucumber in a fine-mesh strainer, sprinkle with a pinch of salt and drain for 10–15 minutes. Squeeze once more before using.
- In a medium bowl, mix the Greek yogurt, the crushed garlic (if using) and the chopped dill until smooth.
- Stir in the drained cucumber until evenly combined.
- Add the olive oil and salt to taste. Mix well, then taste and adjust the seasoning.
- Cover and refrigerate for at least 30 minutes so the flavours develop. Drizzle with a little olive oil and garnish with dill before serving, if you like.
