Ingredients

Instructions

  1. Heat olive oil in a large frying pan over medium heat.
  2. Cut the chorizo into 1/2-inch (1.25 cm) pieces, add to the pan and stir every 1 to 2 minutes for 5 to 7 minutes, until lightly browned and cooked through.
  3. Remove the chorizo from the pan and set it aside.
  4. In the same pan on the same heat, add the sliced onion and garlic and stir every 1 to 2 minutes until evenly sautéed.
  5. Meanwhile, crack the eggs into a bowl, season with salt and pepper, and whisk.
  6. When the onions are slightly translucent (6 to 8 minutes), add a small pinch of salt and pepper and stir, then lower the heat.
  7. Return the chorizo to the pan, pour in the whisked eggs and gently stir continuously, as for a scramble, for 2 to 3 minutes until just cooked through.
  8. Remove from the heat immediately, transfer to serving dishes and top with chopped parsley.
