Ingredients

Instructions

  1. In a bowl, mix the yeast, a little of the sugar and the warm water. Leave for about 5 minutes to activate.
  2. Add the flour, cornflour and remaining sugar, and mix to a smooth, thick batter.
  3. Cover and leave in a warm place for 30 minutes, or until slightly bubbly.
  4. Heat the oil in a deep pan or fryer to 190°C.
  5. Using a tablespoon, drop spoonfuls of batter into the hot oil. Fry for about 1 minute, just until set and lightly coloured.
  6. Transfer to a wire rack. Repeat with the remaining batter.
  7. In batches, fry the awamat a second time for 4 to 5 minutes, turning now and then, until golden brown and crisp.
  8. Remove from the oil and drain on a wire rack.
  9. For traditional awamat, toss or drizzle with warm sugar syrup before serving.
