Ingredients

Instructions

  1. Chop the pork into 8 large chunks, put them in a large pan with half the ginger, cover with cold water and bring to a boil over high heat. Cook 15 minutes, skimming scum, then drain and rinse under cold water. Rinse the pan.
  2. Chop the spring onion whites into chunks and finely slice the greens, keeping them separate.
  3. Heat the oil in the pan over medium-high heat. Add the rock sugar and stir until melted, then cook until it turns golden caramel.
  4. Add the pork and turn to coat and caramelise on all sides.
  5. Add the remaining ginger, Sichuan peppercorns, star anise, cinnamon, bay leaves and onion whites. Pour in the Shaoxing wine, light and dark soy sauces, then add just enough water to cover the pork.
  6. Cover tightly and simmer for 3 hours until very tender.
  7. Transfer the pork to a wire rack over a tray and let cool until it can be handled.
  8. For the dough, mix the yeast and warm water in a stand mixer with a dough hook on low for 1 minute. Add the flour, baking powder, bicarbonate of soda, salt and oil and mix until a shaggy dough forms.
  9. Increase to medium-low and knead about 6 minutes until smooth and elastic. Shape into a ball, cover and rest 30 minutes.
  10. Preheat the oven to 180°C fan-forced (355°F). Knead the dough lightly and divide into 8 equal pieces.
  11. Shape each piece into a round, roll into a long thin rectangle, then roll up tightly from one end into a log, tucking the tail underneath. Stand it upright and press flat with your palm into a round.
  12. Repeat with the remaining dough. Cook the discs in a lightly oiled heavy frying pan over medium heat, covered, for 2 minutes until browned, then uncover, turn and cook 2 more minutes.
  13. Transfer to a tray and repeat with the remaining discs. Put the tray in the oven for 4 minutes.
  14. Chop the pork finely and mix with the sliced spring onion greens. Slice each bun open almost all the way, divide the filling evenly among them and serve warm.
