Ingredients

Instructions

  1. Generously coat all sides of the steak with salt and pepper, then rest it at room temperature for 40 minutes to 2 hours (or overnight in the fridge).
  2. Preheat the oven to 400°F. Cut the top off the garlic head to expose the cloves, saving the scraps. Drizzle with olive oil, sprinkle with salt and pepper, wrap tightly in foil and roast for 1 hour, until the cloves are browned and jammy.
  3. Combine the chiles, sliced shallot and reserved garlic scraps in a heatproof bowl. In a saucepan, combine the vinegar, water, salt, coriander seeds, mustard seeds and honey. Bring to a simmer and cook 5 minutes, until the salt and honey dissolve. Pour over the chiles, cover and let rest at least 20 minutes. Drain and set aside.
  4. Fry the sliced shallots in 1 cup of vegetable oil over medium-high heat until bubbling, then reduce the heat and fry gently, stirring often, until golden brown. Drain on paper towels.
  5. Melt the butter in a large pan over medium heat until the foaming subsides. Add the minced shallot and sweat 1-3 minutes until lightly browned and translucent. Add the garlic and cook 30 seconds until fragrant. Add the flour and stir until the vegetables are coated. Add the half and half and cook 1-2 minutes until it begins to thicken. Add the spinach and nutmeg, reduce to low and cook, stirring o
  6. Heat the vegetable oil in a cast iron pan over medium heat until smoking. Raise the heat to medium-high, press the steak into the centre of the pan and weigh it down with a heavy pan. Cook 3-5 minutes until deeply browned, then flip. Cook a further 5-7 minutes, flipping as needed, until it reaches 125°F at the thickest point. Remove, cover with foil and rest 10 minutes.
  7. Scoop the roasted garlic out of the skins. Slice the steak thinly on a bias, across the grain.
  8. Toast the bread in the reserved beef fat in the pan, adding olive oil if there is not enough fat. Spread roasted garlic on both sides of the toast. Spread creamed spinach on the bottom slice, top with pickled chiles, and shingle the steak over it. Top with fried shallots and pressed cheese, then broil or torch until the cheese melts. Add the top bread, press, slice in half and serve.
