Instructions

  1. Preheat a smoker or grill for indirect cooking at 250°F (121°C) and add 2 chunks of cherry wood to the hot coals.
  2. Cut the bacon into 1 1/2-inch strips lengthwise, then cut each strip into 1 1/2-inch cubes.
  3. In a small bowl, mix the light brown sugar with the BBQ rub. Put the bacon cubes in a large bowl, sprinkle with the sugar mixture and toss to coat evenly.
  4. Lightly grease a raised cooling rack with canola cooking spray and arrange the bacon pieces on it, using several racks if needed.
  5. Smoke the racks for 1 hour, then flip each piece and smoke for 1 more hour.
  6. Mix the BBQ sauce with the rib glaze. Put the smoked bacon in a half-size aluminium pan, pour the sauce over and toss gently to coat.
  7. Return the pan to the smoker and glaze for 20–30 minutes. Remove, let cool slightly, then serve.
