- Cardamom6
- Black cardamom1
- Onion1
- Chili pepper1–2
- Garlic · paste1 tsp
- Mint3 tbsp
- Cilantro3 tbsp
- Salt½ tsp
- Water for pressure cooker1 ¾ cups
Instructions
- Rinse the rice well at least three times, then soak it in 3 to 4 cups of water for at least 30 minutes.
- Slice the onion and green chilies, make a fine paste of ginger and garlic, and finely chop the mint and coriander leaves.
- Crush the ½ inch cinnamon, 2 cloves and 3 green cardamoms into a fine powder in a mortar and pestle.
- Drain the rice completely after soaking.
- Heat ghee in a pot or pressure cooker. Add the shahi jeera, cloves, green cardamoms, black cardamom, bay leaf and cinnamon. When they sizzle, add the onion and green chilies and saute until slightly golden.
- Stir in the ginger garlic paste and fry until fragrant. Add the drained rice, mint and coriander leaves and fry on moderately high heat for 2 minutes.
- Add the salt and ground spice powder, pour in the water and stir well along the bottom. Taste and add more salt if needed.
- Pot method: cover and simmer on low until all the water is absorbed and the rice is fully cooked. If it seems dry, add a few tablespoons of hot water, stir and cook more.
- Pressure cooker method: cover and cook on medium-high heat for 1 whistle. Let the pressure release naturally, open the lid and fluff the rice with a fork.
- Instant Pot method: press SAUTE and add ghee and the whole spices. When they sizzle, add onion and green chilies and saute until golden. Stir in the ginger garlic paste and saute 30 seconds. Add the drained rice, mint and coriander, press CANCEL and saute 1 minute. Add salt, ground spice and water, then scrape the bottom of the pot with a spatula. Taste and add salt if needed.
- Lock the lid with the steam release valve set to sealing. Press PRESSURE COOK (or manual) and set the timer to 5 minutes. When it beeps, let the pressure release naturally for 5 minutes, then move the valve to venting to release the rest.
- Open the lid, stir gently and fluff the rice with a fork. Serve with curry or raita.
