Baked Apple Cider Donuts
Ingredients
- Cider1
- Flour2 cups
- Baking soda1 tsp
- Baking powder¾ tsp
- Cinnamon · ground1 ¾ tsp
- Apple1 ¾ tsp
- Salt¼ tsp
- Butter · melted8 tbsp
- Egg1
- Brown sugar½ cups
- Sugar1 ½ cups
- Milk½ cups
- Vanilla1 tsp
Instructions
- Simmer the apple cider in a small saucepan over low heat, stirring occasionally, until reduced to 1/2 cup (120ml). This takes about 20 minutes. Leave any spices or solids on top, then let it cool for 10 minutes.
- Preheat the oven to 350°F (177°C). Spray a donut pan with nonstick spray.
- In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, apple pie spice and salt.
- In another bowl, whisk the melted butter, egg, brown sugar, granulated sugar, milk and vanilla. Pour into the dry ingredients, add the reduced cider and whisk until smooth. The batter will be slightly thick.
- Pipe the batter into the donut cavities, filling each about halfway. A large zip-top bag with a corner cut off works well.
- Bake 10-11 minutes, until the edges and tops are lightly browned. The donut is done when it springs back when poked on top. Cool 2 minutes, then move to a wire rack. Re-grease the pan and repeat with the remaining batter.
- In a medium bowl, mix the 1 cup sugar, 3/4 teaspoon cinnamon and 3/4 teaspoon apple pie spice. When the donuts are cool enough to handle, dip both sides in the 6 Tablespoons melted butter, then coat generously in the spice sugar.
- Serve the donuts right away for best results.
