Ingredients

Instructions

  1. Preheat the oven to 375°F.
  2. In a small bowl, mix the 1/2 cup brown sugar, 1 tsp cinnamon and 1/8 tsp nutmeg with a fork. Stir in the 1/3 cup dried cranberries and set aside.
  3. Wash the 6 medium baking apples and core them with a melon baller or small paring knife, leaving the base intact so the filling stays in. Place them in a casserole dish just large enough to hold them without touching.
  4. Divide the filling evenly among the apples. Top each with 1/2 tablespoon butter, walnuts if using, and any leftover cinnamon mixture. Set the apples in a 9x13 casserole dish.
  5. Pour 1 cup hot water into the dish and bake at 375°F for 45 minutes to 1 hour, until the apples are soft but not mushy. Larger apples may need the full hour.
  6. Spoon the juices from the dish over the apples before serving.
