Baked Feta Pasta
Ingredients
- Cherry tomato17 ½ oz
- Garlic8
- Feta cheese6 ½ oz
- Pasta14 oz
- Extra virgin olive oil¼ cups
- Oregano · dried1 tsp
- Basil
- Salt
- Black pepper
Instructions
- Preheat the oven to 200°C (400°F).
- Put the cherry tomatoes and unpeeled garlic cloves whole into an oven dish. Season with salt, pepper and oregano, pour over the olive oil and toss with your hands to coat.
- Place the block of feta in the middle of the dish, surround it with the tomatoes, sprinkle a little more oregano and drizzle olive oil over the feta.
- Bake for 25 to 30 minutes, until the tomatoes have blistered and the feta has softened.
- When the tomatoes have 10 minutes left, bring a large pot of heavily salted water to the boil. Cook the pasta, and before draining, save some of the pasta water.
- Take the dish out of the oven. Peel the garlic cloves (carefully, they may be hot) and mash them in the same dish with a fork.
- Stir everything together, breaking up the feta until it forms a creamy sauce.
- Add the drained pasta to the dish with the basil leaves. Mix together, adding a splash of pasta water if needed to bring it together.
