Baked Onion Pakora
Ingredients
- Onion · thinly sliced2 cups
- Chickpea flour⅓ cups
- Rice flour2 tbsp
- Ginger · minced½ tsp
- Chili pepper1–2
- Turmeric½ tsp
- Chili powder¼ tsp
- Salt½ tsp
- Baking soda
- Oil1 tbsp
Instructions
- Put the sliced onion in a large bowl and separate the rings so they don't clump.
- Add all the spices, salt, chickpea flour, rice flour and baking soda, then drizzle in the oil and mix.
- Let the mixture rest 5 to 10 minutes; the onion will release moisture.
- Add the water a little at a time until the mix is pasty and the onions are coated in a thin layer of batter, not a runny batter. If you want more coverage, add 1 to 2 tablespoons more chickpea flour with a little water.
- Drop small to medium spoonfuls onto a parchment-lined baking sheet.
- Bake at 400°F (205°C) for 20 to 25 minutes, checking at about 17 to 18 minutes, rotating the sheet then. Brush with oil after the 18-minute mark if you like.
- Let the pakoras cool for a few minutes before serving.
