Ingredients
- Shrimp2 lb
- Garlic · minced3–4 cloves + 3–4
- Olive oil6 tbsp
- Lemon7 tsp
- Smoked paprika1 tsp
- Oregano · dried1 tsp
- Salt¾ tsp
- Black pepper½ tsp
- Chili flake · flakes½ tsp
- Parsley · chopped4 tbsp
Instructions
- In a large bowl, combine the olive oil, garlic, lemon juice, lemon zest, paprika, oregano, salt, pepper, chili flakes and parsley. Set aside a few tablespoons of this marinade for brushing later.
- If using frozen shrimp, thaw completely and pat very dry.
- Add the shrimp to the marinade and toss until coated. Marinate for 15 to 20 minutes.
- Thread the shrimp onto skewers, optionally alternating with red onion, zucchini or pineapple.
- To grill: preheat a grill or grill pan to medium-high. Grill the skewers 2 to 3 minutes per side, until the shrimp are pink and opaque with light char marks. Brush immediately with the reserved marinade.
- To bake: preheat the oven to 220°C (425°F). Place the skewers on a parchment-lined baking sheet or wire rack and bake 6 to 8 minutes, flipping halfway if desired. For extra colour, broil 1 to 2 minutes at the end. Brush immediately with the reserved marinade.
- The shrimp are done when they form a loose C shape; a tight O shape means they are overcooked. Serve immediately.
