- Vegetable broth1 cup
- Chili flake · flakes¼ tsp
- Salt1 tsp
- Shrimp1 lb
- Feta cheese8 oz

Instructions
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the shallot and bell pepper and sauté until softened, about 5 minutes.
- Lower the heat. Add the crushed tomatoes, garlic, salt, red pepper flakes (if using) and broth, and simmer until the sauce reduces and darkens slightly, about 10 minutes.
- Meanwhile, melt the butter, brush it over the sourdough slices, and grill them in a pan until crispy and golden brown. Wrap in foil and keep warm in the oven.
- Place the shrimp in a single layer in the tomato sauce. Cook for about 5 minutes, flipping once, until the shrimp are no longer translucent.
- Turn on the broiler. Sprinkle the feta over the top, then broil for 5 minutes or until the feta is browned.
- Finish with chopped parsley. Serve with the grilled sourdough and lemon wedges.
