Ingredients

Instructions

  1. Preheat the oven to 205°C / 400°F.
  2. Mix all the crumble topping ingredients in a bowl and set aside.
  3. Beat the melted butter and sugar together until fully combined, about 2 minutes.
  4. Add the eggs one at a time, mixing after each.
  5. Mix in the yogurt, milk and vanilla.
  6. Sift in the flour, baking powder and salt and mix just until combined. Do not overmix.
  7. Gently fold in the blueberries, fresh or frozen, without overmixing.
  8. Line a muffin pan with liners and divide the batter evenly among them. The batter makes 6 large or 12 standard muffins.
  9. Top each muffin with the crumble.
  10. Bake 5 minutes, then lower the oven to 180°C / 350°F and bake for 30 minutes more, or until a toothpick inserted comes out clean.
  11. Let the muffins cool completely.
