Ingredients

Instructions

  1. Preheat the oven to 400°F with a rack in the center.
  2. In a medium bowl, toss the fruit with the 2 tablespoons sugar, lemon zest and lemon juice. Let it sit until glossy and juicy, at least 30 minutes and up to 4 hours.
  3. In a large bowl, whisk together the 1/2 cup sugar, flours, baking powder and salt.
  4. In a small bowl or measuring cup, whisk together the milk, egg and vanilla.
  5. Put the butter in a 9-inch round pan, 8-inch square pan, or 1 1/2- to 2-quart baking dish and melt it in the oven, 4 to 6 minutes if the butter is cold from the fridge.
  6. Once melted, swirl the butter so it coats the sides of the dish, then pour it into the flour mixture and stir with a spatula until combined.
  7. Add the milk mixture and whisk well.
  8. Immediately spread the batter in the warm buttered dish, then spoon the macerated fruit and its juice over the top, leaving a few bare spots of batter showing.
  9. Bake until golden brown and puffed, 30 to 35 minutes.
  10. Serve warm.
