Ingredients
- Flour240 g
- Baking soda¾ tsp
- Baking powder¾ tsp
- Salt½ tsp
- Cinnamon · powder½ tsp
- Oil⅓ cups
- Sugar¾–1 cup
- Banana1 ½ cups
- Vinegar1 tbsp
- Vanilla½ tbsp
- Walnut¼–½ cups
Instructions
- Grease a loaf pan (8½ x 4½ inches) and set it aside. Bring all ingredients to room temperature.
- Preheat the oven to 340°F (170°C) for at least 15 minutes.
- In a large bowl, mash the bananas very well. Add the sugar and water, and whisk until the sugar fully dissolves.
- Add the oil, vinegar and vanilla extract, whisk, and set this bowl aside.
- Sift the flour, salt, baking soda and cinnamon into another large bowl. Baking powder is optional; add it for a lighter loaf.
- Whisk the wet ingredients again and add half of the sifted flour. Fold in, then add the rest of the flour and fold until just combined. If using wheat flour, add 2 tablespoons more water. Do not overmix.
- Transfer the batter to the greased pan, tap the pan on the counter a few times, and sprinkle the chopped walnuts on top.
- Bake for 60 to 63 minutes, until a tester inserted in the center comes out clean. It may need a little longer depending on your oven.
- Cool in the pan on a wire rack for 10 minutes, then turn the loaf out onto the rack and cool completely before slicing.
