Ingredients

Instructions

  1. Preheat the oven to 425°F (218°C). Grease a 12-cup muffin pan or line it with liners. Set aside.
  2. Mix all the streusel ingredients in a small bowl. Set aside.
  3. Whisk the flour, cinnamon, baking soda, baking powder and salt in a medium bowl. Set aside.
  4. With a paddle attachment, beat the butter and sugar on medium-high speed for about 3 minutes until creamy. Scrape down the bowl. Beat in the egg for about 1 minute, scraping down again. Add the mashed bananas and yogurt and beat on high until combined; the mixture may look curdled.
  5. Add the dry ingredients and beat on low speed until just combined. The batter will be thick. Do not overmix.
  6. Put about 1.5 tablespoons of batter into each cup, sprinkle with 1 scant tablespoon of streusel, add another large spoonful of batter, then top with the remaining streusel. Fill the cups right to the top. Gently swirl the streusel into the batter with a toothpick or knife.
  7. Bake for 5 minutes at 425°F (218°C). Then, without removing the muffins, lower the oven to 350°F (177°C) and bake for another 15–16 minutes, until a toothpick inserted in the centre comes out clean. Total baking time is about 20–21 minutes.
  8. Let the muffins cool for 5 minutes in the pan, then move them to a wire rack or serve warm.
