Banana Cottage Cheese Muffins | Healthy High-Protein Muffins
Ingredients
- Whole wheat flour1 cup
- Flour¾ cups
- Baking powder1 tsp
- Baking soda½ tsp
- Cinnamon1 tsp
- Salt¼ tsp
- Cottage cheese1 cup
- Banana2
- Maple syrup⅓ cups
- Olive oil2 tbsp
- Egg2
- Vanilla1 tsp
- Chocolate chip⅓ cups
Instructions
- Preheat the oven to 350°F (175°C). Line a 12-cup muffin pan with large paper liners, or lightly grease the cups.
- In a large bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, baking soda, cinnamon and salt. Set aside.
- Blend the cottage cheese, bananas, maple syrup, olive oil and vanilla until smooth.
- Transfer the blended mixture to a separate large bowl, add the eggs and whisk until just combined.
- Add the dry ingredients to the wet mixture and fold gently with a spatula until no dry streaks remain. Do not overmix. Fold in the chocolate chips now if using.
- Divide the batter evenly among the 12 cups, filling each about three-quarters full. Add a few extra chocolate chips on top if you like.
- Bake for 18 to 20 minutes, until lightly golden and a toothpick inserted in the center comes out clean or with a few moist crumbs. Test beside a melted chocolate chip, not through it.
- Cool in the pan for 5 to 10 minutes, then move to a wire rack to cool completely.
