Banana French Toast with Caramelized Bananas
Ingredients
- Bread1
- Banana · sliced3
- Almond milk½ cups
- Maple syrup2 tbsp
- Flour2 tbsp
- Vanilla½ tsp
- Oil1 tsp
- Nutmeg¼ tsp
- Very good pinch of salt and black pepper1
- Brown sugar2 tbsp
- Milk2 tbsp
- Cinnamon1
Instructions
- Blend all the French toast batter ingredients until smooth, then pour into a shallow bowl.
- Heat a skillet over medium heat and add the oil, spreading it across the pan.
- Dip each bread slice in the batter for about 2 seconds, flip and soak for another 2 seconds, then lift out and let the excess drip off for 2 to 3 seconds.
- Place the soaked slice in the hot skillet and cook for 4 to 6 minutes per side. If your stove runs hot, use medium-low heat.
- Cook until the batter is well set and the bananas are caramelized but not burnt; if the toast does not release easily, cook another minute before flipping.
- For the caramelized bananas, combine the banana slices, sugar, non-dairy milk, nutmeg and a pinch of salt in a skillet over medium heat.
- Stir occasionally until the mixture thickens, about 6 minutes.
