Banana Pancakes
Ingredients
- Flour1 cup
- Baking powder2 tsp
- Salt¼ tsp
- Nutmeg · grated ground¼ tsp
- Buttermilk1 cup
- Butter · melted4 tbsp
- Egg2
- Banana · mashed2
- Vanilla1 tsp
Instructions
- In a large bowl, whisk together the flour, baking powder, salt and nutmeg (if using).
- Add the buttermilk, melted butter, eggs, mashed banana and vanilla (if using). Whisk until just combined; a lumpy batter is fine.
- Let the batter rest for 5 minutes.
- Heat a griddle or skillet over medium heat. Melt about 1 teaspoon of butter on it and brush it over the surface.
- Pour the batter in 1/4-cup portions, leaving at least 2 inches between pancakes. Cook 2-3 minutes until bubbles form on top, then flip and cook 1-2 minutes more.
- Transfer the pancakes to a plate. Repeat with the remaining batter, without buttering the griddle again.
