Banana Swiss Roll Cake Recipe π The Must-Try Summer Dessert
Ingredients
- For the sponge cake
- Egg7
- Sugar6 tbsp + 100 g
- Flour4 tbsp
- Baking powder1 tsp
- Vanilla sugar1 packet
- Sunflower oil3 tbsp
- Salt1 pinch
- Banana2
- Cream
- Milk500 ml
- Butter1 tbsp
- Cornstarch40 g
- Vanilla1 tsp
- Heavy cream100 g
Instructions
- Preheat the oven to 170Β°C (340Β°F), conventional setting without fan.
- Separate the eggs. Beat the whites on low speed for about 30 seconds until slightly frothy, add a pinch of salt, then continue beating until stiff peaks form.
- In another bowl, beat the 5 yolks with 6 tablespoons of sugar on low speed until combined. Sift in 4 tablespoons of flour, 1 teaspoon baking powder and the vanilla sugar, and mix on low speed for about 1 minute.
- Fold the yolk mixture into the whites in three batches with a spatula, taking care not to deflate them.
- Line a baking tray with parchment, greasing the edges too. Spread the batter evenly and tap the tray on the counter a few times to release large air bubbles.
- Bake on the middle rack for 15 minutes.
- While still warm, remove the cake from the tray and parchment. Trim the edges into a neat rectangle, then roll it into a log using a kitchen towel and let it cool, ideally for 1 day, or at least 2 hours if in a hurry.
- For the pastry cream, heat 500 ml milk and 1 tablespoon butter in a saucepan. In a separate bowl, whisk 2 eggs, 2 tablespoons cornstarch and 1/2 cup sugar until smooth.
- Add the warm milk to the egg mixture in three batches, whisking constantly. Return everything to the pan and cook on low heat, stirring constantly, until it thickens and starts to boil. Cook 3 more minutes, stirring, without letting it burn.
- Let the pastry cream cool, covering it with plastic wrap pressed onto the surface or stirring it occasionally.
- Whip 1/2 cup heavy cream to soft peaks and gently fold in the cooled pastry cream.
- Unroll the cooled cake, spread an even layer of the cream over it, lay sliced bananas along the front part, and roll tightly from the front, using the less creamy end to form the log.
- Chill the rolled cake in the refrigerator for at least 3 hours.
- Just before serving, dust with powdered sugar and garnish as you like.
