Banh Khot (Vietnamese Savory Mini Pancakes) from Scratch: Garden
Ingredients
- Rice flour1 cup
- Cornstarch1 tbsp
- Coconut milk200 ml
- Turmeric · powder½ tsp
- Salt¾ tsp
- Shrimp14
- Black pepper · ground0.13 tsp
- Scallion2
- Lettuce
- Vegetable oil
- Chili pepper
Instructions
- Whisk all the batter ingredients together and let it rest for at least 20 minutes, longer if you can.
- In a small bowl, season the shrimp with salt and pepper and set aside.
- Heat a banh khot pan on medium-high and add a little oil to each well. Stir the batter before filling each well, since the flour settles. Sprinkle green onions and dried shrimp if using. Cover and cook on medium-low for about 8 minutes.
- Remove the lid, add a shrimp to each well and top with more green onions. Drizzle oil over the onions and around the rims. Cover and cook until the shrimp is cooked through, about 1 minute. Uncover and cook about 2 more minutes for your preferred crispiness.
- Loosen the edges with a sharp metal spoon, starting with the outside, then scoop them out.
