Banoffee Pie Recipe
Ingredients
- Graham cracker · crushed12
- Sugar9 tbsp
- Butter7 tbsp + ½ cups
- Brown sugar½ cups
- Sweetened condensed milk8 oz
- Banana · peeled sliced2
- Heavy cream1 ¼ cups
- Vanilla · paste1 tsp
- Chocolate1
Instructions
- Preheat the oven to 350°F. Mix the crust ingredients, press into a 9-inch pie plate, and bake for 10 minutes at 350°F.
- Melt the butter and brown sugar in a heavy-bottomed saucepan over low to medium heat, stirring constantly for 5 minutes. Keep it gently warm; it should lightly bubble, not boil hard.
- Add the sweetened condensed milk and stir or whisk. Bring to a gentle boil and keep stirring for 3-4 minutes, until the colour turns medium brown and the mixture thickens slightly.
- Pour the toffee into the cooled crust. Let it stand 1-2 hours at room temperature until cooled and dry to the touch. If it is too runny, chill it in the fridge for a few hours until set.
- Whip the cold heavy cream with the sugar and vanilla using an electric mixer until medium peaks form.
- Once the toffee is set, arrange the sliced bananas in a single layer on top, spread the whipped cream over them, and finish with chocolate shavings.
- If chilling, let the pie rest on the counter for 15-30 minutes before serving so it softens.
