Ingredients

Instructions

  1. Set up the barbecue for direct cooking over medium-high heat, to about 240°C.
  2. Halve and stone the peaches, cut each half into 3 and put them in a bowl. Halve, stone and quarter the plums and add them to the bowl.
  3. Crack the eggs into a deep roasting tray, add the milk and a pinch of cinnamon. Finely grate in the orange zest, keeping some for garnish, and whisk. Soak the brioche slices in the mixture, turning halfway so they are fully coated.
  4. Drizzle the peaches and plums with 1 tablespoon of olive oil and place them on the barbecue. If they are not very ripe, cover with a basting dome to soften. Cook for about 4 minutes, or until lightly charred, turning to cook all sides. Move to a bowl, squeeze over the orange juice and drizzle with 1 tablespoon of maple syrup.
  5. Place a couple of knobs of butter on the barbecue and add the brioche slices. Cook 4 to 5 minutes, flipping halfway, until crispy and caramelised. Drizzle with the remaining 1 tablespoon of maple syrup, turn to caramelise, then move to a plate.
  6. Divide the French toast between 6 plates, top with the fruit and some of its juice, and sprinkle with the remaining orange zest.
