Basque Cheesecake Recipe - Japanese Cooking 101
Ingredients
- Cream cheese8 oz
- Sugar2 ½ oz
- Egg2
- Heavy cream½ cups
- Salt¼ tsp
- Vanilla½ tsp
- Flour1 tbsp
Instructions
- Preheat the oven to 400°F (205°C). Line a 6-inch round cake pan with a 12-inch square of parchment; it does not need to fit neatly.
- Beat the cream cheese and sugar on low speed for about a minute until smooth. Add the egg and yolk and mix well. Scrape down the bowl.
- Add the heavy cream, salt and vanilla and beat for 30 seconds. Sift in the flour through a mesh strainer and beat for 30 seconds more. Finish by mixing the batter by hand with a spatula.
- Pour the batter into the prepared pan and bake for 40-45 minutes, until the top is dark brown and the cake jiggles when the pan is shaken.
- Cool for 15 minutes, then unmold. Refrigerate for 3-4 hours.
