Ingredients

Instructions

  1. Cook the macaroni for 1 minute less than the packet says. Drain, reserving some pasta water.
  2. In a bowl, mix the chicken with the seasonings and 1 tsp (5 ml) olive oil, but not the BBQ sauce. Heat a pan over medium-high heat, add the chicken and cook for 4 minutes. Add the BBQ sauce, mix and cook for 30 seconds. Remove from the pan.
  3. In the same pan over medium-high heat, add the milk or cream, cream cheese, onion powder and garlic powder. Stir and bring to a simmer. Reduce heat to medium, add the grated cheese and stir until thick. Add the drained macaroni, mix, check seasoning and remove from heat.
  4. Serve in meal prep containers with the chicken on one side and the macaroni cheese on the other.
  5. Keep for 3-4 days in the fridge or freeze for up to 3 months. Thaw overnight in the fridge before reheating in the microwave or a pan over medium heat, adding a splash of water or stock if reheating in a pan.
