Instructions
- Preheat the pellet grill to 350°F using your favorite wood pellets.
- In a large bowl, combine the ground beef, ground pork, onion, garlic, eggs, Parmesan and bread crumbs.
- Add the sausage seasoning and BBQ rub, then mix by hand until everything is evenly combined.
- Portion the mixture into balls using a small scoop or spoon, rolling them gently without packing them firmly.
- Spray a wire rack with cooking spray and set the meatballs on it.
- Dust the tops lightly with BBQ rub and place the rack on the grill.
- Cook until the meatballs reach an internal temperature of 165°F, about 35–40 minutes.
- Transfer the meatballs to a baking pan and coat them with BBQ sauce.
- Keep cooking until the sauce bubbles and glazes the top, about 5–10 minutes.
- Hollow out the center top of the French bread loaf, removing extra bread with your hands to make room.
- Lay the provolone slices in the bottom of the bread, add as many meatballs as will fit, and top with shredded mozzarella.
- Return the sandwich to the grill until the cheese melts, and toast the top piece of bread on the grill at the same time.
- Take the sandwich off the grill, set the toasted top on the sub, cut and serve.
