Beat Anemia With This Super Food - Ragi Mudde under 25 mins
Ingredients
- Flour1 cup + 1 tbsp
- Salt⅓ tsp
- Ghee1 ½ tsp
Instructions
- In a small bowl, mix 1 tablespoon ragi flour with 3 tablespoons water until smooth and lump-free. Set aside.
- Bring 2 cups water to a boil in a heavy-bottomed pot, with 1/3 teaspoon salt and 1/2 teaspoon ghee if using.
- Stir the ragi mixture and pour it straight into the boiling water. Stir well and bring back to a boil over medium heat.
- When the mixture thickens and bubbles, turn the heat to the lowest setting and add the 1 cup ragi flour. Mix with a sturdy wooden stick or spatula until no streaks of flour remain (60 to 90 seconds), then keep mixing until there are no lumps. Scrape the stick clean.
- Cover and cook on the lowest heat for 5 minutes.
- Stir for 30 to 60 seconds, remove the stick, cover again, turn off the heat and let it steam for another 5 minutes.
- The ragi mudde is done when it is no longer sticky to the touch of your fingers or a spoon.
- Lightly wet a wide plate with a little water. Transfer the dough onto it, wet your fingers, and knead for 30 to 60 seconds. Divide into 2 to 3 equal portions and roll into small balls.
- Serve hot with a gravy or soupy lentil dish.
